Just a chef working the day's best fish in front of the two of you, one considered piece at a time. It is the whole point of omakase, made small and made private.

Your chef reads the pace of the night and lets it unfold: ichi-go ichi-e, one time, one meeting, an evening made once for the two of you.

Everything but the table is handled. Your chef brings the fish, the ingredients, and their own tools, and takes care of preparation, service, and cleanup. You provide the kitchen and the company.
